I cannot stress enough how much I love this pasta. I make it once a week. I made it last night for my sister last night, and she told me I need to stop saying how “easy” stuff is because my recipes aren’t as “easy” as I think (she is 24 btw, sooo take that with a grain of salt.). SO, I’m sorry if I have been misleading anyone with my “easy recipes” but I promise THIS ONE IS SOOOO EASY! I made her watch me do it step by step, and she agreed that this is definitely the easiest one yet. Okay I promise I’m done saying the word easy.

A couple things: when I say “healthy” I don’t always mean low calorie, sorry. I don’t believe in counting calories, I think it’s more important to use just focus on using quality ingredients and eating in moderation. We need calories! We don’t need chemicals. I consider this pasta “healthy” because all of the ingredients are good for you! It is a hearty, delicious recipe filled with a bunch of stuff that is not harmful to our bodies. To me, that = healthy. I use ground turkey but that can be substituted for ground beef if your heart desires. Also, I use brown rice pasta because I like the ingredients better than traditional pasta, but you can also use regular pasta for this as well. I add avocado slices and hot sauce – Cholula obvi – but again, add whatever you want! I promise you will be surprised at how quick and tasty this is!

One Pot Taco Pasta w/ Ground Turkey + Brown Rice Rotini

  • Olive Oil
  • Ground Turkey
  • 1 jar of salsa
  • 1 box of brown rice rotini
  • Cheese
  • Optional: avocado, hot sauce, chili powder
  1. Heat olive oil in large skillet
  2. Add ground turkey and season to your preference (I use chili powder & salt)
  3. Cook, stirring occasionally until cooked through
  4. Stir in 3/4 jar of salsa
  5. Add 2 cups of water
  6. Add pasta noodles
  7. Bring to a boil
  8. Stir, cover and reduce heat to a simmer for about 15 minutes or until all water has been absorbed and pasta is cooked thoroughly
  9. Add cheese
  10. Optional: add avocado + hot sauce and serve
